Now that we were in Colorado, we needed to stop to eat. I don’t know that any of us were really that hungry, but we knew that once we headed up into the mountains, there wouldn’t be anywhere to stop for a while. So as we approached Fort Collins, I started searching out someplace to eat.
The Must Eat meal for Colorado is Chile Colorado, which the wise, all-knowing internet describes as “a Mexican dish featuring a red sauce and tender pieces of beef”. This meant we needed a Mexican restaurant. I contacted a friend who had lived in Fort Collins, and she said that the best food was down near the university, so we headed that way. I found some great reviews for a place called Inca.
Food: The menu here is quite extensive. It’s practically a book. The kids went with their standbys – soft shell tacos and quesadillas. M decided to go with the must eat meal – Chile Colorado.
It’s not much to look at, but the taste was amazing. I went a different route and order the Trio Enchiladas – A combination of three of our most popular enchiladas: one enchilada suiza, one with mole sauce and one enchilada with cream sauce. Served with rice and beans.
This was INCREDIBLE! All three sauces were amazing. I’ve tried to recreate the suiza sauce at home, but can’t get it quite right. It’s unbelievable.
Atmosphere: This place is pretty much like any other Mexican restaurant you’ve been to. It’s brightly colored, but dimly lit. Mexican music in the background. It is located in the same parking lot as a strip mall, and the GPS directions took us in a big circle around the parking lot.
Service: Their Yelp review has several negative reviews for service. We didn’t have the same experience. Our food came quickly, which was great for people on a road trip – fast service is always a bonus! The waitress was friendly and attentive.
Tips: We would go back in a heartbeat. I would also order the Trio Enchiladas again. It was wonderful! As for the must-eat meal, M liked it, but it wouldn’t probably have been his first choice if he hadn’t been taking one for the team. We aren’t alcohol drinkers, but I’ve read the margaritas here are not great, so I’d recommend skipping them and just getting your calories from the delicious food!
